Holiday Wreath Salad

Prep Time: 10-15 minutes
Serves: 4-6 as a side, 2-4 as a main

 

Ingredients

Salad

    • 6 cups arugula
    • 2 EverCrisp® apples, thinly sliced
    • ½ walnuts, toasted
    • ½ cup feta, crumbled
    • Balsamic glaze

Dressing

    • 3 Tbsp olive oil
    • 1 Tbsp balsamic vinegar
    • 1 tsp honey or maple syrup
    • Salt and pepper to taste


      Directions

        1. Arrange arugula in a ring on a large round platter to form a wreath shape. 
        2. Scatter toasted walnuts and crumbled feta over the greens.

        3. Fan apple slices evenly around the wreath. Toss with a little lemon juice first if prepping ahead of time. We love EverCrisp® for this because it's slow to brown!

        4. Drizzle generously with balsamic glaze.

        5. Add dressing to a small bowl and place in the center of the platter before serving.
