Holiday Wreath Salad

Serves: 4-6 as a side, 2-4 as a main
Ingredients
Salad
- 6 cups arugula
- 2 EverCrisp® apples, thinly sliced
- ½ walnuts, toasted
- ½ cup feta, crumbled
- Balsamic glaze
Dressing
- 3 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp honey or maple syrup
- Salt and pepper to taste
Directions
- Arrange arugula in a ring on a large round platter to form a wreath shape.

Scatter toasted walnuts and crumbled feta over the greens.

Fan apple slices evenly around the wreath. Toss with a little lemon juice first if prepping ahead of time. We love EverCrisp® for this because it's slow to brown!

Drizzle generously with balsamic glaze.

Add dressing to a small bowl and place in the center of the platter before serving.
